Hello there my friend!

Apologies for no newsletters for the last couple of weeks. You may remember that I was unwell at the start of the year, and apparently, I'm not as recovered as I thought I was 😞. So this time I'm taking it even easier... if that's possible with just a couple of weeks till Pesach 😲

Fortunately, I have my guide to a stress-free Pesach to remind me that this holiday doesn't have to be overwhelming! If you need a reminder about what's important and what's just 'nice to have', this guide provides help, keeping things manageable and in perspective.

I have no idea whether I'll be up to writing a 'proper' newsletter again next week, so I'm going to pack this one with as much helpful info as I can, and lots of recipes, just in case. Consider it your bumper Pesach edition, full to the brim with everything you need for a fun, fabulous festival.

Favourite Pesach recipes

I also wanted to highlight a few of my family's favourite Passover recipes. However I'm feeling this year, I hope I'll have the energy to make a few of these! Or at least supervise while someone else makes them...

  • ​Duke of Cambridge matza cake​
    Scrumptious chocolate tiffin made with wine-soaked matza, dried fruit and nuts. Super easy and tastes amazing!
  • ​Vegetarian moussaka​
    ​
    My family are big aubergine fans so this baked dish of succulent aubergine, rich tomato sauce and a tangy cheesy topping is always a huge hit.
  • ​Matza pizza​
    ​
    Is it even Pesach if you don't make matza pizza?! Load on the toppings, bake and enjoy!
  • ​Tenderstem with garlic almond sauce​
    ​
    The delicious, nutrient-rich sauce for these tender broccoli spears is a real favourite here. I use it as a dressing or dip for all sorts of veggies and salads.
  • ​Lemon and cinnamon charoset with pine nuts​
    ​
    This has been a seder staple for years at FFF towers, and is SOOO much yummier than the standard Ashkenazi sludge I grew up with! If you're after more options, check out this list of the best charoset recipes from around the world.​

Shabbat Shalom

I'll be trying not to overdo it this week, and a relaxing Shabbat sounds like a very good idea indeed. I hope you also manage to take some time for yourself, and carve out some calming 'me time' amid the pre-Pesach craziness.

Hello my friend! One more week and it's Erev Shavuot! Crikey, that's snuck up on me... On the plus side, Shavuot always heralds the start of Summer for me, which can only be a good thing.
