Shabbat recipe of the week - Creamy courgette and potato soup

This Shabbat falls right before Yom Kippur. For me, that means an emphasis on homely, comforting, humble food, made to nourish our bodies and souls as we prepare for the Day of Atonement. This creamy vegan soup, made with seasonal courgettes, hearty potatoes, and gentle seasonings, is ideal.

It's also a lovely option to break your fast, with its smooth texture, delicious flavour, and gentle warmth.

Wishing you a meaningful Yom Kippur

Very soon, we will observe Yom Kippur, when we pray that our wishes and desires for our selves, families and communities will be heard. For me, this period of the year is also about making plans - what I hope to achieve over the coming year, and how I can make an impact, however small, to change things around me in a beneficial way.

Although Yom Kippur is a fast day, there are of course traditional foods associated with the meals that precede and follow the fast. These tend to be plain, unfussy dishes like challah, egg and onion, and simple soups. Whatever your traditions, I hope you have an easy and meaningful fast if you choose to observe.

Looking forward to Succot

Hot on the heels of Yom Kippur comes Succot - the Autumn harvest festival, and there are many delicious traditional dishes to enjoy. Stuffed foods are often prepared, symbolising abundance and plenty as the tasty fillings spill out!

Some of our favourite Succot recipes include:

  • Stuffed eggs with olives
    Hard-boiled eggs stuffed with a delicious olive filling make a great prepare-ahead starter, or a lovely addition to a lunch or supper.
  • Moroccan stuffed aubergines
    This gorgeous vegan dish is bursting with savoury onions and mushrooms, protein-rich tofu, and a warming blend of traditional North African spices.
  • Spinach and mushroom puff pastry plait
    An impressive vegetarian main dish that's easy to assemble and looks a million dollars!
  • Creamy fish pie with mustard mash
    Pure comfort food! Protein-packed fish, classic flavours of dill and mustard, and a cloud of fluffy mashed potatoes on top.
  • Butternut squash and mushroom cobbler
    A rich and hearty vegetable stew under a delicious topping of savoury scones. A perfect one pot meal to keep you warm in the sukkah!
  • Blintzes with spiced apple filling
    Such a beautiful, Autumnal dessert! Golden pancakes stuffed with a sweet, fragrant apple filling. Serve warm with a dollop of cream or yogurt. Yum!
  • Fruit and nut filled babka
    Babka counts as a stuffed food, right? Enjoy the swirls of sweet and delicious filling in an easy to make, soft and pillowy babka.
  • Healthier fruit crumble
    Succot is surely the start of crumble season! Use whatever fruit you like under this delicious topping enriched with oats, nuts, seeds, and spices.
