Let's celebrate World Food Day!

Hello there my friend!

Tomorrow is World Food Day, celebrating the UNFAO and its work towards creating a sustainable, prosperous, and food-secure future for all. It's a great opportunity to consider the origins of our food, and to thank the people who worked tirelessly to get it from a seed all the way to our plates.

Shabbat recipe of the week - Quapple Spomble!!

Quince and apple sponge crumble, or 'quapple spomble' as it's known in our house, is an absolutely gorgeous pudding that I'm sure you'll love. It's the beautiful love-child of a fruit crumble and a hot sponge pudding, with layers of soft and juicy fruit, warm and tender sponge, and crunchy golden crumble. Kipper even asked for this instead of a birthday cake! (Although I substituted raspberries and cherries for the quince on that occasion. You can easily change up the fruit and its still yummy!)

Nutritious, warming recipes for Autumn days

Below are some of my favourite quick, easy and deliciously healthy recipes. Enjoy! And happy World Food Day to one and all 🤩

  • Extra creamy oatmeal porridge
Anyone else ready for hot breakfasts? I've been tucking in to indulgent, creamy bowls of porridge, packed with beta-glucans and dietary fibre. Top with fresh fruit, nuts or a shake of spice for an extra boost!
  • Sugar-free breakfast muffins
Full of fresh and dried fruits, vegetables and grains, these moist and moreish breakfast muffins are wonderful warm from the oven.
  • Carrot and tomato soup with ginger and orange
With its bright colour and zingy flavours, this soup is a real crowd-pleaser! Plus its packed with vitamins A, B and C, and lycopene.
  • Miso tahini pasta
This super-quick pasta dish offers protein and essential minerals from the tahini, and gut-friendly probiotics (plus an amazing depth of flavour!) from the miso. Serve with a green veg and you're all set.
  • Sicilian-style greens with pine nuts, currants, capers and lemon
This is my favourite way to upgrade kale, spinach, chard or other leafy greens, to create a savoury, tangy, zesty and fibre-rich dish.
  • Feel-good fish curry
Succulent fish and vegetables in a gently spiced coconut milk broth makes a wonderfully nourishing dinner as the evenings start to draw in.
  • Aubergine shakshuka
This rich and filling veg-packed take on Shakshuka is a great mid-week meal that's ready in 30 minutes. Enjoy it with good sourdough or pita for scooping up the sauce.
  • Lemon sole, green bean and tomato tray bake
I love a meal where everything cooks together to tasty perfection! This fish and veg tray bake is just such a dinner, and is perfect with some boiled potatoes or simple grains.
  • Spicy and sweet smoked tofu and vegetable stir-fry

The smoked tofu adds a wonderful flavour and a generous amount of protein to this vibrant and crunchy polyphenol-packed stir-fry.
