This gorgeous salad just shouts SUMMER! It's fresh, verdant, and full of delicious flavours. You can make it all peas, all beans, or a mixture, and you'll love the crunchy radishes, fresh dill and delicious citrussy dressing. You can also add a handful of pea shoots if you happen to have them. So fresh and tasty!

Hello August!

It's just a couple of days until August (already, so soon!) so this week I'm looking ahead to all the fresh and delicious produce that the new month brings. I'm looking forward to:

Vegetables​
Aubergines πŸ†, Beets, Beans, Broccoli πŸ₯¦, Cabbage, Carrots πŸ₯•, Cauliflower, Courgettes, Cucumbers πŸ₯’, Fennel, Kohlrabi, Leeks, Lettuce πŸ₯¬, Mangetout, Peas πŸ«›, Peppers πŸ«‘, Pumpkins, Radishes, Rocket πŸš€, Sorrel, Spring Onions, Squash, Sweetcorn 🌽, Swiss Chard 🌱, Tomatoes πŸ… and Watercress.

Fruits​
Blackberries, Blackcurrants, Cherries πŸ’, Damsons, Greengages 🍈, Plums, Raspberries, Redcurrants and Strawberries πŸ“. Plus early varieties of apples 🍏 and pears 🍐 and other 'Autumn' fruits.

Take a trip to your local market, farm shop or greengrocer to find the best selection.

Delicious Summer recipes for August

It's almost too easy to make delicious dishes at this time of year, as fresh, flavoursome produce is just so abundant. Here are some simple ideas to make the most of your favourites.

  • ​Strawberry cucumber and spinach salad​
    A fresh and summery salad that's sweet, savoury, crunchy, tender and crisp! The strawberries add a pop of colour and flavour that can't be beat.
  • ​Caramelised onion and aubergine dip​
    This savoury and rich aubergine dip is easy to make from just five ingredients. It's great for spreading or scooping, and makes terrific sandwiches too.
  • ​Creamy courgette puff pastry tart​
    Layer ready-rolled pastry with seasoned cream cheese and thinly sliced courgettes for a sensational low-effort dinner.
  • ​Roasted red pepper pasta sauce​
    This vibrant, creamy, plant-based sauce is so simple to make, and has a fabulous flavour. Serve with your favourite pasta for an easy family meal.
  • ​Israeli red cabbage salad​
    I could eat a mountain of this simple Israeli-style salad. It's crunchy, tangy, and goes with just about everything.
  • ​Leek and cheddar topped cod​
    On the table in half an hour! Enjoy juicy cod fillets with a golden topping of sautΓ©ed leeks, herbs and savoury melted cheese.
  • ​Tomato, green bean and lemon sole traybake​
    Fresh fish and tasty veg cooked together in just 20 minutes. A quick, nutritious weeknight dinner that's full of flavour.
  • ​Blackberry and apple crumble cake​
    A moist, delicious, fruity cake that's sturdy enough for picnics and packed lunches. Use foraged hedgerow blackberries - or just grab a punnet from the shops!
  • ​Individual mini berry cheesecakes​
    Perfect summertime puddings! A fruity berry cheesecake layer, topped with plain cheesecake and a swirl of intense berry syrup.
