Spring is in the air!

Hello there my friend!

I hope you had a lovely Tu B'Shevat and are enjoying a fun half term - just a few days left before school starts again and we can get back to 'normal' - now that puts a spring in my step!

Yes, Spring is definitely in the air, so it must be time to spring into action! It's time to feel the sun on your face, and switch up the recipes to reflect the changing season. Out with the wintry warmers and in with fresh and fabulous Springtime food!

One thing I've been eating a lot of recently is this gorgeous miso-tahini pasta. It's super delicious, packed with vegan protein, fibre, gut-loving probiotics, and health-boosting vitamins and minerals, and best of all, it can be ready in 15 minutes! It's great on its own in a pinch, but you can add whatever veggies you have to hand - broccoli, beans, peas, mushrooms... Or follow it up with a crisp salad and use any leftover sauce as a deliciously creamy dressing. Yum!

Below you'll find more of my favourite recipes for this time of year. I hope you'll join me in enjoying some of them this week!

Tasty recipes for the start of Spring

Enjoy some fresh air and sunshine (with a bit of luck!) and then tuck in to one of these deliciously Springy recipes:

  • Baked cod with a cheddar and leek topping
Flaky, tender fish under a crispy, savoury layer of cheesy leeks and breadcrumbs. So yummy!
  • Spring vegetable risotto - dairy free

A lovely risotto with a generous amount of spring veggies. No butter or cheese needed, but feel free to add them if you want to.
  • Baked potatoes with herbs and poppy seeds
A super simple way to upgrade a baked spud! These only take a couple of minutes of active time, but look beautiful and taste fantastic. A great side dish with almost anything.
  • Garlic and parmesan roasted vegetables
I love roasted veg and these savoury, cheesy, incredibly moreish ones are a favourite. Make more than you think you'll need!
  • Easy vegetable crustless quiche
Use whatever veggies you have to hand in this easy, tasty, high-protein dish that's perfect for breakfast, lunch or dinner.
  • Fruit and nut yogurt parfait
I'm slowly transitioning from Winter-months porridge to warmer-months cold breakfast so this delicious parfait is appearing on my table a few times a week.
  • Plum and almond crumble cake
I've seen huge punnets of plums in the shops recently, and this cake is a great way to enjoy them. Eat it warm as a comforting pudding, or have a slice with a cuppa as a tasty pick-me-up.

While it might not be time to pack away the hats and scarves quite yet, I hope these bright and tasty recipes will help you feel that Spring is definitely on its way. 🌷🪻🌸

Shabbat Shalom

As always, here's wishing you and yours a very Good Shabbos - Shabbat Shalom! May each week be better than the one before, and may Shabbat bring us peace, health, happiness and many blessings for everyone.
