Coconut lemon cake with olive oil & yogurt

This super-moist lemon cake is made with olive oil, yogurt and fresh lemon juice and zest for maximum zing and a rich, delicious flavour. It has sunny Mediterranean vibes running right through it and is the perfect slice to enjoy on a beautiful August Shabbat. You can use a non-dairy yogurt like soy or oat to keep it parve if you prefer.

Tasty recipes from around the UK

Although Kipper has done a 3-week post-GCSE Israel tour this Summer, we've mostly spent our time here in the UK. We had a trip to the Norfolk coast, DH and I went walking in the New Forest, I visited old friends in Devon, and the three of us spent a glorious week in Edinburgh. So here are some recipes celebrating the delicious food that can be found right here in the UK.

As well as classics of British cuisine, you'll also find some of my favourite British dishes with a Jewish twist, like bubble and squeak latkes, and Chelsea bun babka!

  • Smoked mackerel kedgeree
    The Victorians ate this delicious one-pot dish of curried rice, smoked fish, eggs and peas for breakfast, but we prefer it as an easy family dinner.
  • Cheese and vegetable pasties
    Originating in the West Country, you can make these satisfying vegetable and cheese filled pasties in the traditional half-moon shape, or go 3-cornered to make savoury hamantaschen!
  • Bubble and squeak latkes
    A delicious hybrid of British and Jewish fried potato cakes/pancakes. Try them for brunch with a fried egg and/or smoked salmon, or serve anywhere you'd normally have chips.
  • Savoury cheese and herb scones
    Who said scones had to be sweet? Butter up a deliciously savoury cheese scone and serve with soup or a salad as a light and tasty meal.
  • Thoroughly British cholent
    A hearty and satisfying vegan cholent full of British flavours! Made with carrots, parsnips and a can of baked beans, it’s a perfect British Shabbat stew.
  • Fabulous fruit flapjack fingers
    If you remember the flapjacks that Rakusens used to make, you'll know these delicious copycat oaty bites are the business! Make yourself a cuppa and enjoy a classic tea-time treat.
  • Devon apple cake
    Inspired by my visit to Plymouth synagogue, this gorgeous fruity cake contains chunks of apple and a generous slosh of cider. Delicious served warm with custard or the West Country way with clotted cream.
  • Eccles cakes
    Originating in the North of England, these sweet, rich, buttery pastries are filled with delicious dried fruits. One of my childhood favourites!
  • Victoria sponge cake
    Is there a more British cake than the Victoria sponge? Beloved of tearooms and WI cake stalls, this sumptuous vegan version is filled with jam, 'cream' and fresh berries.
  • Chelsea bun babka
    British Chelsea buns meet sticky swirly babka! This lightly spiced, fruited cake recipe combines the best of both confections in a sweet and scrumptious loaf.

Is it just me, or does the Summer seem to have lasted forever and also been over in a flash?! Funny how time plays tricks on you...

Either way, once a week we get a day off! Thank goodness for that. However you spend it, I hope you have a relaxing and refreshing Shabbat. Wishing you Shabbat Shalom - A Good Shabbos! - that brings rest, comfort, joy, peace and blessings to us all.
