Love and Salads - A Perfect Summer Pairing πŸ₯°πŸ₯—

Hello again my friend!

I'm always working hard to reduce food waste, which often involves eating random assortments of leftovers as a 'salad' for lunch. But one item we often have lingering in the kitchen is challah.

Don't get me wrong, we all love challah! But too much gives DH tummy ache, and I prefer to pack my plate with nutrient-dense fruits and veg, rather than fill up with starchy carbs. Kipper usually gets at least one challah-sandwich in her lunchbox, but after a few days it's too stale for sandwiches, and then what..?

I was looking for a way to add leftover challah to my healthy lunchtime plate, and I think I hit the jackpot with challah panzanella salad!

Based on the classic Italian panzanella, this delicious fresh salad mixes toasted cubes of past-its-best challah with fresh ripe tomatoes, herbs and a tangy, olive-oil-rich dressing. So good!

And as it needs a little rest while the toasty challah soaks up the amazing flavours of the other ingredients, it actually benefits from being made ahead! What's not to love?! Just look at those colours...

Shabbat Shalom

I'm sure you can't have missed that June is Pride month πŸ³οΈβ€πŸŒˆ
Judaism teaches us that we are all created in the image of God, and that every person is an essential part of the diverse tapestry of humanity. As Rabbi Nachman of Breslov said, β€œThe day you were born is the day G-d decided that the world could not exist without you.”

Pride month is an opportunity for acceptance, self-affirmation, and celebration of our own authentic selves. Love is love, and there more there is, the more we all benefit! πŸ₯°

Here's wishing everyone a joyous Pride month and a wonderful Shabbat. Shabbat Shalom - Good Shabbos! - to everyone. May it bring us joy, blessings and many reasons to celebrate.

With love, Helen x.
