Jewish pancakes are in-blintz-able!

Hello again my friend!

The last few weeks have been an exhausting time, for the Jewish people as a whole, and closer to home, for some of my friends and loved ones. At such times, I find it helpful to focus on positive thoughts and actions, and work hard to make a (small!) contribution to the overall good.

I also like to remind myself of some of the more encouraging bits of Jewish history - most usually, the delicious food traditions that we have cherished and enjoyed for decades/centuries/millennia.

On which note, and with the very not-Jewish "pancake day" (Shrove Tuesday) approaching next week, I've been thinking a lot about Jewish pancakes and how delicious they are!

From blintzes to latkes, there's no shortage of tasty fried dishes in the Jewish cook's repertoire, and I've taken the opportunity to include some of my favourites below. Do you have a favourite Jewish pancake?

A crunchy and nutritious snack

This week I've also published a new recipe for a delicious, nutritious snack that I've been making and enjoying A LOT! Crunchy and sweet, seed and nut brittle is packed with protein, fibre and micro-nutrients and has an amazing crispy texture and yummy flavour. It's super-easy to make too - just mix, bake, and break into pieces.

Nourishing and delicious - exactly what's required!
