Shabbat recipe of the week - Challah Summer Pudding

Summer Pudding is one of my favourite desserts! Bursting with fresh and fruity flavours, it takes full advantage of the season’s glorious ripe berries and makes the perfect end to a Summer meal.

This (new!) recipe upgrades the original by swapping challah for basic white bread, which adds a subtle difference in texture and flavour. It's the perfect way to use up any leftover challah and create a stunning dessert for next Shabbat!

Healthy snacking

School's out for Summer! And there seems to be a lot more snacking going on as a result. Active, growing children (and their friends!) seem to be constantly hungry. And I don't know about you, but I do find it hard to make a snack for someone else without having a little something myself...

While convenient, a lot of prepackaged snacks are heavy on the sugar and other less healthy ingredients. So I try to make healthier snack choices easy too. Quick grab-and-go options that feel fun can include things like apple slices with cinnamon and a yogurt dip, cheese cubes, hardboiled eggs with everything bagel seasoning, or popcorn. Friends coming over? Create mini snack boards with crackers, humous, and sliced fruits and veggies, or skewer fruit and veg chunks to make simple and appealing 'kebabs'. Keep things bright and visually appealing with red strawberries, green grapes, and orange clementine segments and everyone will dive in!

The real win in these low-sugar, high-protein/fibre snacks, is that they actually fill a hole instead of creating an endless rollercoaster of lurching from one snack to the next. Other good, filling combinations that are simple to assemble include apple or pear slices with nut butter, hummus with cucumber and carrot sticks, Greek yogurt with berries, or a handful of nuts with dark chocolate chips. Why not have a few ready to grab in the fridge? When the snacks are tasty, colourful, and easy to reach, healthy eating stops feeling like a battle.

Beyond the simple ideas above, below are some of my favourite recipes for nutritious and tasty snacks. Beloved by kids and adults alike, these will help keep hunger at bay between meals all summer long.

Deliciously healthy holiday snacks

Simple to make, delicious snack foods that even fussy teens will enjoy. And nutritious too - what's not to love?!

  • Seed and nut brittle
    I keep a box of this in the freezer at all times, so I can easily reach for a shard of this sweet, crunchy, oh-so-moreish snack. So easy and packed with fibre, protein and vitamins! (Also good with ice-cream!!)
  • Seven species granola bars
    These gorgeous chewy bars are full of fibre, protein and healthy fats, and are made with the biblical seven species for a unique and delicious flavour.
  • Seeded maple spice cookies
    With a coating of crunchy, nutritious seeds, these tasty vegan cookies are quick and easy to bake, and absolutely scrumptious!
  • No-bake Nutella bites
    Made with oats and puffed rice, the only sugar in these tasty bites comes from the Nutella. Since each little treat is just 41 calories, you can have two!
  • Easy banana scones
    The perfect use for over-ripe bananas! These golden scones have a flaky, tender interior, a delicious flavour, and no added sugar. Enjoy with butter, jam, almond butter or your favourite spread.
  • Beetroot humous
    If you prefer a savoury option, this gorgeous pink humous is full of protein, healthy fats and fibre. Enjoy it with focaccia (below) or scoop onto tortilla chips, crisps or vegetable sticks for extra nutrition.
  • Easy vegan soda bread
    So simple, this tasty quickbread is delicious with butter and a slice of cheese. Add a handful of seeds to the dough for extra vitamins, minerals and fibre, or check out this veg-packed version.
  • Easy focaccia in one hour
    This quick and easy focaccia is the business! Eat it warm dipped in olive oil, or make a more substantial snack with dips and spreads. Turn it into an activity by getting kids involved with the toppings, or make some 'focaccia art' that tastes as good as it looks!
