Shabbat recipe of the week - Lokshen pudding with apple

As we shift gears and enter 'hot pudding' season, what better way to start than with a classic? This is my Mum's version of lokshen pudding, which sandwiches a filling of soft, fruity apples between two layers of sweet and spicy noodles. It's warm, comforting, and absolutely delicious! If you've never used noodles in a dessert before, this is your sign to give it a whirl!

Warming dishes for cosy Succot meals

Succot is the Autumn harvest festival, and traditionally meals are eaten outdoors, in a temporary shelter. While the weather at this time of year in Israel is just perfect for sitting outside in a shady succah, the same can't always be said of Britain! Chillier evenings mean our Succot menus tend to include warming soups, bakes and casseroles, and hot puddings, to insulate us as the temperatures fall.

Below are some of my family's favourite Succot dishes. I hope you'll enjoy them too!

  • ​Whole roast cauliflower with tomato mushroom sauce​
    This impressive vegan centrepiece is delicious, nutritious and looks the business when you bring it to the table!
  • ​​Vegetarian moussaka (gluten free)​
    ​
    Layers of grilled aubergine, rich tomato sauce, and tender potato slices with a delicious cheesy topping. Just add a green vegetable on the side for a filling, nourishing meal.
  • ​Baked wild mushroom risotto - no stirring!​
    Pop it in the oven, then sit back and relax! A creamy, indulgent and richly flavoured risotto without all that tedious stirring.
  • ​Creamy leek, spinach and smoked mackerel savoury crumble​
    Smoked fish and tasty vegetables nestled under a savoury crumble topping. A wonderfully warming dish for Autumn.
  • ​'Charoset' stuffed baked apples​
    ​
    OK, they may have originated on Pesach, but these delicious baked apples, stuffed with spiced dried fruit and nuts, make a terrific hot dessert. Just add custard!
  • ​Magic lemon pudding​
    This sweet-tart pudding 'magically' turns a single batter into a zesty sponge and luscious sauce as it bakes. With 40% less sugar, this recipe tastes great and is a little bit healthier too.
